      West coast moments | the big blue.

      Three moments captured at sea last weekend. Being out at sea is one of my favorite things to do. Preferably outside the Bohuslän coast, just like in these pictures. It's moments like these that take us Swedes through those dark months of winter each year - we let these summer moments fuel our souls & remind us about better, and brighter, summer days. Because, if you didn't know - nothing truly beats a perfect Swedish summer's day. I promise!

      The 3 Ingredient Chocolate Mousse.

      Det där när en god dessert ska förstöras genom att den ska göras "nyttig" - det är jag inget fan av. Dessert är dessert och när jag väl unnar mig något gott efter middagen vill jag gå all in. Med det sagt, detta receptet är faktiskt ett undantag.

      Det här är en lättare och delvis nyttigare variant av den klassiska chokladpuddingen, men fortfarande lika mumsig. Choklad med en hint av kokos, det blir helt enkelt inte fel. Att den görs utan gelatin innebär också att den funkar fint för alla veganer där ute.


      INGREDIENSER: för 4 portioner

      • 400 ml kokosmjölk
      • 1 matsked socker eller motsvarande
      • 2 matskedar kakao


      GÖR SÅ HÄR:

      • Låt kokosmjölken stå i kylen över natten. Då separeras kokosmjölken till grädde & vatten
      • Öppna burken och skopa ut grädden. Använd gärna det överblivna kokosvattnet till morgondagens smoothie!
      • Mixa grädden och socker i cirka 1-2 minuter i en skål med hjälp av en mixerstav eller elvisp
      • Häll i kakaon och fortsätt mixa en stund till

      Klart! Dekorera & servera!



      Okay, don't freak out. I'm not one of those people who tries to ruin perfectly good desserts by making them "healthy". But, this recipe is so good, I've clearly made an exception here. The mousse is made without gelatin, so if you're vegan, this one is perfect for you!

      INGREDIENTS: this recipe makes 4 servings

      • a can of coconut milk (400 ml),
      • 1 tablespoon of sugar
      • 2 tablespoons of cacao powder

      HOW TO:

      • Leave the can of coconut milk in the fridge overnight. This way the milk separates into water and cream.
      • Scoop out the cream (the coconut water left can be used in a smoothie the next morning) and whisk it together with the sugar for a minute or two - preferably with an electric whisk
      • Add the cocoa powder and mix until even
      • Decorate & serve!
